Knafeh is a sweet pastry made of Kadaif noodles (very thin noodles made of flour and water, pushed through a fine strainer onto a hot metal platter for a very quick cooking process.The Kadaif noodles are crunchy, neutral in flavor, and are usually used formaking either sweet or salty dishes) heated in butter or oil, topped with goat cheese and another layer of orange tinted Kadaif noodles. A thick sugar syrupis poured all over this joyous pastry and sometimes garnished with some crushed green pistachios. Knafeh is usually served warm- this enables the goat cheeseto melt and lets you enjoy this stringy sweet, goaty, crunchy delight. You cant afford to miss this one. Unlike Baklava which is sliced in individual pieces, Knafeh isusually made on a big metal tray and is cut according to the customer's request or according to the size set by the owner as a portion size.
